Italian Salad

Dominicos is one of the oldest Italian restaurants in Pasadena, California. We used to frequent it a lot. It has quite a few locations if memory serves me correctly. Pasadena Old town, Pasadena on Washington, Arcadia by the Racetrack are a few. The food was so amazing but what always captured me was their Mama Rosa’s Antipasto Italian salad. I loved the different levels of textures that I would encounter under all the cheese. I added my own version, but the original was so great. I added to my Italian Salad peppered salami and green onions. I love the surprise and delight when people discover what lies beneath the cheese in my salad.

Italian Salad Recipe

This antipasto salad has a wonderful combination of flavors and once the salad dressing is added it's like the finishing touch of lipstick to your ball gown Cinderella. We have fresh crisp lettuce as your base. We then place a layer of fresh sweet tomatoes and over the tomatoes we introduce a layer of peppered salami to give it a kick of flavor. We then place a layer of black olives for a briney touch. We then top it off with a mound of mozzarella and garnish with green onions. Finally the lipstick...i mean salad dressing goes over the top to finish the complete salad. Enjoy!

Ingredients
  

  • 4 Cups of Lettuce
  • ½ Cup Tomatoes (diced)
  • ½ cup Peppered salami (sliced and quartered)
  • ¼ cup of Black olives (sliced)
  • ½ Cup of Mozzarella cheese (shredded)
  • ¼ Cup of Green onions (diced)
  • Drizzle of Olive Gardens Italian Dressing. (Or Italian dressing of your choice.)

Instructions
 

  • Gather your ingredients
  • Let’s place two empty bowls at the ready.
  • Fill halfway with lettuce.
  • Divide the tomatoes amongst both bowls.
  • Divide the peppered salami between both bowls
  • Divide the olives between both bowls.
  • Fill the top of the salads with cheese.
  • Garnish with the green onions and more tomatoes.
  • Drizzle with the salad dressing and Enjoy!
