Cubano Pizza

Have you and your significant other ever craved two different dishes for dinner??? That is pretty much how this dish came about. I LOVE a good Cuban sandwich. However, my husband isn’t big on sandwiches and was leaning more towards a pizza, which is one of my FAVORITE foods of all time. So I figured why not just create a Cubano Pizza and satisfy both of our cravings. Needless to say we were both happy!!!

Ingredients
  

Pizza Dough:

  • 4 tablespoons of active dry yeast
  • 8 FL oz. very warm water (about 90 degrees)
  • 7 ½ cups of bread flour
  • 3 cups of cool water
  • 4 teaspoons of salt
  • ½ cup olive oil
  • 6 tablespoons of honey

Cubano Pizza: 2 large servings

  • 2 tablespoons of light olive oil
  • 2 teaspoons of garlic salt
  • ½ teaspoon black pepper
  • ¼ cup orange juice
  • ¼ cup lime juice
  • 2 teaspoons cumin
  • ¼ teaspoon crushed red pepper flakes
  • 4 garlic cloves minced
  • 2 Lbs. Shredded Pork
  • 4 cups of shredded swiss cheese
  • 10 slices of ham (thinly sliced)
  • 1 cup of sliced pickles
  • 1 cup of sliced pepperoncini

Mustard Aioli:

  • ½ cup of mayo
  • ¼ cup mustard

Instructions
 

  • Fill a measuring cup with warm water. (use a thermometer to check temp. About 90 degrees)
  • In the same measuring cup. Add in your yeast to the warm water and wait about 5 minutes for your yeast to bloom (Bubbles floating on top)
  • Let’s prepare the mixer by adding your dough hook
  • Add your flour to your mixing bowl.
  • Add in your yeast which should have bloomed by now.
  • Add in your salt, olive oil, honey and water.
  • Now knead your dough by turning on your mixer starting on low speed and slowly increasing the speed. (This way your dough doesn’t go flying everywhere)
  • Knead for about 5 minutes or until your dough is smooth & elastic
  • Using a large bowl, drizzle a little olive oil in the bowl and ensure there is a thin layer of oil around the entire bowl (This will assist in preventing the dough from attaching to the bowl)
  • Place dough in bowl and cover with saran wrap. (Ensure your saran wrap also has a thin layer of olive oil)
  • Now place in a warm spot for about 30 minutes. (Do not be shocked if your dough grows. That is the idea)
  • While you are waiting for your dough to rise, Lets shift our focus on the toppings, Start by preheating your oven to 425 degree F.
  • Place all your Marinade ingredients (olive oil, garlic salt, black pepper, orange juice, lime juice, cumin, oregano, pepper flakes and garlic) into a mixing cup or bowl and whisk together.
  • Place your shredded pork into an oven safe pan & pour your marinade over it.
  • Now place your mojo pork in the oven for about 20 mins.
  • Remove from oven and set aside (Remove a cup of marinade from pan for pizza sauce. If unable then simply use Italian dressing)
  • After the dough has had time to rise, prepare a work surface by spreading a thin layer of flour on the surface as well as the rolling pin and on the dough. Then Remove dough from bowl, place on your floured service and punch it down and divide into portions)
  • Once separated into portions, lightly flour your parchment surface and roll the dough into a thin layer or to your desired size.
  • Place the parchment paper with dough on baking sheet. (ensure it is evenly distributed)
  • Now brush your marinade or Italian dressing over the pizza
  • Then place a thick layer of shredded swiss cheese over the marinade.
  • Place a layer of pulled mojo pork on top of the cheese.
  • Then place a layer of ham on top.
  • Put the pizza in 425 F degree oven for about 15 minutes or until golden brown and bubbly.
  • Remove from oven when ready
  • Now, you will need to make your mustard Aioli by mixing your ½ cup of mayo and your ¼ cup of mustard)
  • Add you Aioli to a squirt bottle and drizzle your mustard Aioli over the pizza.
  • Top with pickles and pepperoncini and ENJOY!
