Ahi Tuna & Crab Tower
Every Friday, we like to have a sushi night. Sometimes you just need something fresh and light. However, This Friday we decided to change things up a bit and try our hand at an Ahi Tuna Poke Tower. We have made all the ingredients before using them as stand only salads or using the components as part of other dishes. However, We have never actually attempted to put these ingredients together in a tower. I am thankful we did, This tower is not only a sight to behold but has such a variety of flavors. I don’t think it is possible to taste the same flavors twice. Each bite is its own experience. The spice of the pepper, the sweetness of the coconut rice, the tang of the lemon and lime juice. Everything blends together and takes you on a journey of flavor exploration. But, don’t take our word for it. See for yourself!!
Ingredients
Coconut Rice 1st Layer:
- 2 ½ cups Jasmine Rice
- 4 tablespoons of Coconut Oil
- 2 ¾ cups of Coconut Water
- 1 teaspoon Lawry’s Garlic Salt
- ¼ cup of Coconut Flakes
Ahi Tuna Poke 2nd layer:
- 1 ¼ lbs. or 19 oz. of grade A sushi quality Tuna (cut into cubes)
- ¼ cup cilantro (minced)
- ½ teaspoon sesame oil
- ½ teaspoon chili flakes
- ½ cup Ponzu
- 1 teaspoon of rice vinegar
Colossal Crab 3rd Layer:
- 16 oz. Container of Colossal Crab
- ¼ cup of green onions (thinly sliced)
- ¼ cup mayonnaise
- 1 ½ tablespoon of lemon juice Salt and Pepper (to taste)
- 1 teaspoon of tobiko
Avocado 4th Layer:
- Avocados (Sliced vertically)
Mango Cucumber Salad 5th Layer:
- 1 cup mango (cubed – ¼ inch)
- 1 cup cucumbers (cubed – ¼ inch)
- 1 tablespoon of red onions (thinly sliced)
- 1 teaspoon of Puerto Rican Chili pepper (thinly sliced or Jalapeno.)
- 1 teaspoon of cilantro (minced)
- 1 tablespoon of lime juice
- 1 tablespoon of light olive oil
- 1/8 teaspoon Garlic salt
- 1/8 teaspoon McCormick pepper
Garnish:
- Black and White sesame seeds
- Tobiko
- Sliced Lemons & Limes
- Cilantro
- Green Onions
- Eel Sauce
Instructions
Coconut Rice: Layer 1
- Gather you rice Ingredients
- Put a 2 ½ QT. pot w/ lid on stove. This will be for the Rice.
- Put heat on high & place coconut oil in pot.
- Using a colander, fill with rice & rinse under running water until the water draining is clear.
- Place rice in the hot pot. Then add coconut water, garlic salt & coconut flakes.
- Using chopsticks or a fork, Stir all ingredients. Wait until it boils and then lower heat to low and let it simmer with the lid on. (about 20 minutes or until soft)
- When rice is soft, fluff the rice gently using chopsticks or a fork. You want to ensure the rice is flakey & fluffy. Once fluffed, cover, turn off heat and leave alone. (Let’s shift focus to the Poke Layer)
Ahi Tune Poke: Layer 2
- Collect your Poke ingredients
- Get a Medium Bowl
- Add your tuna, sesame oil, Ponzu, Chili flakes, Cilantro and Rice Vinegar to the bowl.
- Mix ingredients together
- Add Saran wrap
- Refrigerate
Colossal Crab Salad: Layer 3
- Gather your crab ingredients
- Get a medium size bowl
- Add in your mayo, lemon juice, green onions, tobiko, Salt and Pepper to taste.
- Mix until well combined and you have your dressing.
- Now gently fold in you crab as to not break up the meat too much. Taste, salt and pepper to taste.
- Wrap bowl with Saran Wrap.
- Refrigerate
The 4th layer will be prepped during the assemble.
Mango Cucumber Salad: Layer 5
- Gather your Cucumber Salad ingredients
- Get a small jar with lid (preferably one that had a twist top)
- Add in your lemon juice, cilantro, garlic salt, pepper, and olive oil.
- Twist the lid on and shake vigorously and set aside. (This is your Cilantro Lemon Dressing)
- In a medium size bowl, place your mango, cucumbers, red onions, and Puerto Rican Chili Peppers.
- Drizzle your Cilantro Lemon dressing on top of the bowl and mix well.
- Once mixed, Cover with Saran wrap.
- Refrigerate
Tower Assembly: Part 1
- Collect your layers together, you will want to get Layer 1,2,3 and 5 ready. Save layer 4 until you are ready!!!!!
- Pull out your plates and place a plastic cylinder on each.
- Starting with your 1st layer. (Rice) You will want to scoop about a cup or your desired portion! into the cylinder.
- Next will be your Tuna Poke (2nd layer). You will want to scoop about a cup over the rice.
- Now we will do the Colossal Crab Salad (3rd layer). This will also be about a cup.
Avocado Crown: 4th Layer
- This is where we build the 4th layer. Begin by slicing an Avocado in half and remove pit.
- Using a large metal spoon, scoop out avocado
- Place flat side down on a cutting board.
- Thinly slice vertically.
Notes
Prep tip: Cutting a Mango
It is easiest to cut the Mango into 3rds. This will help you avoid the large pit in the middle
Using one side, You will want to make vertical & horizontal slices
Once cut, flip it inside out. This will make the cubes pop out.
Repeat this process for the other side as well
Using a knife, Cut the cubes off at the skin
