Portobello Turkey Burger

I was rushing through the markets yesterday trying to find grapefruit soda for my Spicy Paloma, well let me tell you, in Puerto Rico that was an adventure. I finally found Jarritos Grapefruit soda…Victory is mine! OK enough of my tangents…while I was at Econo supermarket, I saw the most humongous Zucchini I swear I thought I was at the LA County Fair and this Zucchini just won the top prize. Anyways there was no way I was not going to purchase this and make Zucchini fries. I also saw some gorgeous Portobello Mushrooms that I thought would pair well with my zucchini fries as a breadless burger replacing the bread buns with Portobello mushrooms. Needless to say this burger is not only healthy because i forgot to mention that our burger is made with ground turkey, this dish is one for the record books, visually it will stop you in your tracks. I warned you… We hope you enjoy it!

Portobello Turkey Burger

These Burgers are not only super healthy, super beautiful and super delicious, but paired with these zucchini fries I'm about to strike inspiration into you! Ok we don't use bread here, instead we use Portobello mushrooms that we brush with BBQ sauce and top with sesame seeds this is a trillion times better tasting than buns. We also use extra lean ground turkey meat which is 90 % lean and 10 % fat. We combine these patties with Irish Dubliner cheddar and cook it all up. We then add lettuce and tomatoes for freshness and drizzle the mustard aioli for twang or tartness. We then pair it with zucchini fries. Let's talk about these zucchini fries for a minute.  These zucchini fries are dredged in a three way dredging station so that the breading sticks the entire time and it keeps its crispness. It is then topped with Parmesan cheese to add that little extra flavor because...here at The Pink Papaya we can and will!
Servings 4 Burgers

Ingredients
  

Portobello Mushrooms

  • 8 Portobello mushrooms
  • 4 Ground Turkey Patties
  • 1/2 cup of green onions (diced)
  • 4 Dubliner Cheddar Slices (Can also use any Cheddar)
  • 4 Curly Lettuce Leaves
  • 4 Tomato slices (thickly cut)
  • 2 Tbsps. of mustard aioli (2 tbsps. Mayo to 1 tbsp. Of spicy brown mustard)
  • 1 Tbsp. of BBQ sauce
  • 1 Tbsp. of sesame seeds. As needed Olive oil.
  • ½ Tbsp. of Garlic Salt
  • ½ Tbsp. of Montreal Steak Seasoning

Instructions
 

  • Gather your ingredients
  • Preheat the oven to 350 F.
  • Clean your Portobello by using a moist paper towel and removing any dirt you may see.
  • Flip them over and remove stems and gills (do not throw away this will be added to the ground turkey)
  • Set on top of a parchment lined sheet pan. Set to the side.
  • In a large bowl add your ground turkey, green onions, mushroom stems and gills, garlic salt, and pepper.
  • Mix well and set aside. (because mushroom shrink when cooked, we will cook the mushrooms first before forming patties)
  • Let’s place mushrooms inside the oven just for them to warm not roast. About 5 minutes.
  • Remove from the oven and place aside.
  • Now based on the size of your Portobellos make your patties accordingly.
  • Place a skillet on medium high and place olive oil in the skillet.
  • When hot, place turkey patties in the skillet.
  • Flip your patties when golden brown on the bottom.
  • Cook thoroughly, it is done when it reaches 165 F.
  • Place your Dubliner or cheddar cheese to melt on top of patties.
  • Once melted, turn off heat and remove patties and place them on a parchment lined sheet pan next to your Portobellos. It is time to build these burgers!!

  • Place four portobellos flat side down and brush a little bbq sauce on the top bun
  • Sprinkle your sesame seeds on top the bbq sauce will help them adhere to the mushrooms.
  • Place the other four mushrooms face up and place some mustard aioli on the inside.
  • Place your lettuce on top of aioli
  • Place your tomato on top of lettuce (salt and pepper your tomato)
  • Place your turkey patties with melted cheese on top of the tomato slice.
  • Place your sesame seed portobello bun on top
  • Plate and ENJOY!
