THE DAY AFTER THANKSGIVING TURKEY POT PIE

For this Turkey pot pie we are using our Stuffing as the crust. Normally you have a pie crust that would be on the bottom as well as the top of your pie. Not us, we are only putting the stuffing on the bottom of our pie. We then incorporate our Roasted Turkey, gravy and green bean casserole together to make our filling. We are then going to top our pot pie with a piping of our roasted garlic mashed potato. Our toppings of French onions and drizzle of cranberry compote elevate this pie to another level and The Pink Papaya is excited to share this Day After Thanksgiving Turkey Pot Pie recipe with you. Ingredients: For Turkey Pot Pie with Stuffing Crust

  • 2 ½ Cups Stuffing (Savory Bread Pudding.)
  • 2 Cups Pavochon Turkey (diced.)
  • 1 Cup Turkey Gravy.
  • 1 ½ Cup Green Bean Casserole.
  • ½ Cup French's Fried Onions.
  • Mashed Potatoes (To be spread over top of pot pie)
  • Garnish:
  • Cranberry Compote
  • Green Onions

Instructions:

  • Gather your ingredients. These should be your left overs
  • Preheat your oven to 350°
  • Butter your pie dish
  • Place your pie dish on a parchment lined sheet pan.
  • In that pie dish place your 2½ cups of stuffing.
  • Using a spoon, flatten your stuffing all around your pie dish and up the sides.
  • Bake for about 15 minutes until golden brown.
  • Take out of the oven and set aside.
  • Go ahead and adjust the oven temp to 400°
  • Put a sauté pan on your stove top on medium heat.
  • In that pan place 2 cups of Turkey, 1 cup of gravy and 1 1/2 cup green bean casserole.
  • Mix well until warmed through until well incorporated.
  • Once warm, place on top of your crust.
  • Place your desired amount of mashed potatoes on top of your filling. Use as much or as little as you want. Some like a thick layer while others like a thin layer
  • Sprinkle your French's Fried Onions on top of your Garlic mashed potatoes.
  • Place the entire pie in your oven until completely warmed through and the onions have a nice golden brown. This should take about 15 minutes. But always keep an eye on it.
  • Set aside for about 5 minutes to let your pie cool off.

Let’s Plate!

  • Cut into the pie and remove a slice
  • Finally, drizzle or place your compote on your slice with a few green onions for a pop of color.
  • Enjoy!
