Spicy Tuna & Avocado Bowl
When I was little, my sister in law Yvonne used to make steaming hot white rice and put it in a bowl. Then she would make cold tuna salad from the can and put it on top of the rice. This may not sound so great because of its simplicity, but let me tell you, never ever was there a grain of rice or tuna salad left over in that bowl. It was always a big hit. I take my inspiration from Yvonne’s dish. I made steamy hot Coconut Rice and topped it with an amazing spicy dressed fresh Ahi Tuna diced and combined with cubed Hass avocados. This dish will melt in your mouth and you will make it again and again I promise. If I’m ever in a pinch and I have to throw together dinner, lunch or even linner, I still will throw together Yvonne’s original dish.
Ingredients
Coconut Rice:
- 2 ½ cups of Jasmine Rice
- 4 Tablespoons of Coconut Oil
- 2 ¾ cups of Coconut Water
- 1 Tablespoon of Lawry’s Garlic Salt
- ¼ cup of Coconut Flakes
Spicy Tuna & Avocado:
- 19 oz. of grade A sushi quality tuna (Cubed)
- 2 Hass Avocados (diced)
- ¼ cup green onions (diced)
- 2 tablespoons Cholula
- 1/3 teaspoon sesame oil
- 1 tablespoon lime juice
- ½ cup mayonnaise
- 1 tablespoon tobiko
Garnish: (Optional)
- Green onions
- Black & White sesame seeds
- Sliced cucumbers
- Eel sauce
Instructions
- Gather your ingredients
- Put a 2 ½ QT. pot w/ lid on stove. This will be for the Rice.
- Put heat on high & place coconut oil in pot.
- Using a colander, fill with rice & rinse under running water until the water draining is clear.
- Place rice in the hot pot. Then add coconut water, garlic salt & coconut flakes.
- Using chopsticks or a fork, Stir all ingredients. Wait until it boils and then lower heat to low and let it simmer with the lid on. (about 20 minutes or until soft)
- When rice is soft, fluff the rice gently using chopsticks or a fork. You want to ensure the rice is flakey & fluffy. Once fluffed, cover, turn off heat and let’s prepare the Spicy Tuna Avocado Salad.
- In a medium bowl, place in your tuna, avocados, green onions, Cholula, sesame oil, lime juice, mayonnaise and tobiko.
- Mix your ingredients together (this will be your Tuna Avocado Salad)
- Now it is time to plate. Grab a bowl and place a bed of coconut rice.
- Then using a large spoon place a scoop of spicy tuna & avocado salad on top of the coconut rice, add your garnish and Enjoy!!
