 Savory Bread Pudding (Stuffing)

While in culinary school i was taught this recipe. Its origin dates back to the colonial days where they used to prepare their meals in pots over the fire place mantles.  Over the years i am sure this recipe has been modified to the times. But like all recipes them stem from somewhere and every recipient makes their own modification based on their tastes and what they deemed the perfect add in or take out. In this case The Pink Papaya added Bacon and We used French baguettes and rolls.  We hope You enjoy our take on stuffing as it was originally called savory Bread Pudding.

Savory Bread Pudding (Stuffing)

This homemade Savory bread pudding or as it is also known by (Stuffing) is a great, simple, and easy to follow recipe to provide you and your family a dish that will have people talking for weeks to come. I must confess to using this recipe often as it is requested by my family. I pair it with Pork chops and Spicy apple compote. This recipe has so much going on. First it is a custard so the eggs, heavy cream and butter add this deep comfort while the rosemary adds this brightness of flavor. Bringing in the bacon is a deep satisfying touch of salty goodness. Lastly, the bread that has absorbed all of the custard and is now creamy on the inside yet crunchy on the top due to the baking process is truly the finishing touch of this Savory bread pudding experience.

Ingredients
  

Ingredients: Savory Bread Pudding (Stuffing)

  • 4 Tbsp. Unsalted Butter
  • ½ Lbs. Bacon (diced)
  • 1 Cup of White Onion (diced)
  • 1 Cup of Green Onion (diced, both white and green parts)
  • 2 Garlic Cloves (minced)
  • 2 Eggs
  • 1 Cup Heavy Cream
  • 1 Cup Milk
  • 1 Cup Chicken stock
  • ½ Tsp. Dried Rosemary
  • 8 Cups French bread (cubed into 1/2 inch)
  • ½ Tbsp Garlic Salt
  • ½ Tbsp McCormick Pepper

Instructions
 

  • Gather your ingredients
  • Preheat your oven to 350 degrees.
  • Place a sauté pan on your stove top on medium heat
  • Place your butter in the pan so it melts
  • Add the bacon, onions and garlic.
  • Sauté until bacon is crisp and onions are caramelized
  • Once caramelized, remove from the pan and place in a bowl.
  • In a different large bowl combine your eggs, cream, milk, chicken stock, salt, pepper and rosemary.
  • Stir to incorporate thoroughly.
  • Stir in the onion bacon mixture.
  • Add the bread to the mixture.
  • Mix well and let the bread mixture sit to absorb the liquid.
  • Prep a baking sheet with parchment paper and place the baking dish on top
  • Butter a baking pan by rubbing some butter around it. Ensure you get every inch.
  • Add the bread pudding mixture to the baking pan.
  • Cover with aluminum foil.
  • Bake for approximately 25 minutes or until the pudding is set.
  • Remove the foil and place back into the oven for a few minutes until you get a golden color on top then remove and prepare to serve
  • Serve alongside your favorite steak, chicken or in our case Roasted Turkey Breast.
