Mango Cucumber Salad Recipe
This salad has its own salad dressing. It is first all placed into a jar and ultimately dresses the salad. Into this jar we have lemon juice, cilantro, garlic, salt, pepper and olive oil. We shake it to incorporate the flavors and place a lid on it and refrigerate. We build this salad by placing in a large bowl your ingredients. We have mango for sweetness. We then have cucumbers for both crunchy texture and freshness. We have Puerto Rican peppers for heat and red onions for texture and flavors. Wow this salad once dressed will leave you speechless. That for me is a rarity...ask my husband. Enjoy!
Ingredients
- 1 cup mango (cubed – ¼ inch)
- 1 cup cucumbers (cubed – ¼ inch)
- 1 tablespoon of red onions (thinly sliced)
- 1 teaspoon of Puerto Rican Chili pepper (thinly sliced or Jalapeno.)
- 1 teaspoon of cilantro (minced)
- 1 tablespoon of lime juice
- 1 tablespoon of light olive oil
- 1/8 teaspoon Garlic salt
- 1/8 teaspoon McCormick pepper
Instructions
- Gather your ingredients
- Get a small jar with lid (preferably one that had a twist top)
- Add in your lemon juice, cilantro, garlic salt, pepper, and olive oil.
- Twist the lid on and shake vigorously and set aside. (This is your Cilantro Lemon Dressing)
- In a medium size bowl, place your mango, cucumbers, red onions, and Puerto Rican Chili Peppers.
- Drizzle your Cilantro Lemon dressing on top of the bowl and mix well.
- Plate and Enjoy!!!
