Lime In Da Coconut Blended Mojito

While living in St Thomas USVI i was introduced to Lime in da Coconut, but as with everything here at The Pink Papaya we decided to put our own twist on the original. This drink is as if the lime in da coconut and a mojito had a baby then put it in a blender…I assure you no children were hurt when creating this delectable concoction. Refreshingly unique comes to mind when sipping on this, while sitting at Luquillo Beach reminiscing of Magens bay, Brewers beach o’ hell any beach in St. Thomas they are all over the top gorgeous, clean and inviting like our Lime in da coconut frozen mojito.

Ingredients
  

  • 8 cups of ice
  • 1 cup cream of coconut
  • 1 cup of Coconut Rum
  • ½ cup of fresh lime juice
  • 16 fresh mint leaves. (Ours came from our plant!)

Instructions
 

  • Gather you ingredients
  • Let’s get our Blender ready. (If using a small blender, you may need to blend 1/2 first then the rest.)
  • Let’s fill with your ice.
  • Pour in your cream of coconut to thicken your drink
  • Add your lime juice to the blender.
  • Add your mint leaves.
  • Pour your coconut rum into the blender.
  • Place the lid on the blender tightly (speaking from experience…)
  • Let’s blend this baby up until it becomes nice, thick and smooth.
  • When reached your desired consistency by adding ice if needed, pour your mojito into a jar and place in the freezer to help maintain firmness for about 5 minutes. This is where we clean up and prepare our glasses and garnishes
  • When you are ready. Get out your glasses and pour your Mojito. We like to place a lime slice with some mint sprigs with a sprinkle of coconut shavings on top. Enjoy!
