Gather your ingredients.
Fill half a medium pot with Canola oil on high heat. (while waiting to warm)
Place 3 shallow dishes for your dredging stations and a parchment lined sheet pan.
One bowl for your flour, one bowl for your beaten eggs and lastly one bowl for your breadcrumbs.
Dip your zucchini sticks first in flour.
Then in the egg.
Then in breadcrumbs and place on a parchment sheet pan. (Continue with the rest of your zucchini sticks until finished.)
Now your oil should be hot. Test it with a wooden spoon and see if the end bubbles when you dip it in the oil.
Place your zucchini sticks in the oil. It takes about 3 minutes or until golden brown
Remove from oil and place on paper towels.
Salt and pepper them and sprinkle with the grated cheese.
