The Elvis Presley Loaf

Peanut Butter Banana Walnut Bread As everybody knows…Elvis loved his banana peanut butter sandwiches. I decided to combine the two ingredients to make this banana bread. I also love the crunch of Walnuts so instead of using crunchy peanut butter I’m using smooth peanut butter and I’m adding chopped walnuts. I love the richness of the vanilla bean paste versus vanilla extract so that is also included into this hunka, hunka, banana bread! I know the king of rock and roll would hugely approve of this Bread as well as my neighbors banana tree!

Ingredients
  

Loaf:

  • 4 cups of all purpose flour
  • 1 ½ cups of granulated sugar
  • ½ cup of brown sugar
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 3 cups of mashed bananas
  • 1 cup of softened unsalted butter
  • 4 eggs
  • cup of heavy cream
  • 3 teaspoons of vanilla bean paste or extract
  • 1 ⅓ cup of peanut butter
  • 1 cup of Walnuts chopped

Topping:

  • 1 cup of smooth peanut butter into a piping bag.
  • ½ cup of whole walnuts

Instructions
 

  • Gather your ingredients
  • Preheat the oven to 350°F.
  • Spray your loaf pan or muffin pans with Pam butter spray
  • Place your pans on a parchment lined sheet pan. (To capture any dripping batter or spill over.)
  • Cut a piece of parchment and lay on the inside of the loaf pan so that it is long enough to lay over the side for easy lift off when done.
  • Then also spray the top of the parchment and lightly flour. Place to the side.
  • Place your flour, sugars, baking powder, baking soda, and salt in a large bowl.
  • Using a whisk, combine.
  • Lets prepare your mixer by placing a paddle attachment on your mixer arm.
  • Inside of your mixer bowl let’s place mashed bananas, butter, milk eggs and vanilla bean paste.
  • At medium speed lets combine these ingredients.
  • Let’s slow down the speed and let’s add your dry ingredient mixture to your mixing bowl.
  • Let’s mix this batter until it is well incorporated.
  • Let’s add the chopped walnuts. Set aside.
  • In a medium microwave safe bowl melt your peanut butter.(about 1 minute)
  • Transfer peanut butter to larger bowl and add 8 scoops of batter to your melted peanut butter.
  • Mix together until combined.
  • Fill your loaf pans or muffin pans ¾ of the way full of the banana walnut batter.
  • Place large spoonfuls of peanut butter batter on top of your banana walnut batter. (We used Large Tablespoons for the loaf and teaspoons for the muffins)
  • Using a wooden skewer swirl the batters without over mixing you want a marbled effect here.
  • In a piping bag, for the loaf pan pipe 3 lines on top and using a skewer make designs on top. For the muffins make round designs and with the the skewer make designs.
  • Place a few walnuts on top if desired.
  • For the loaf pan, bake for 50-55 minutes or until a toothpick comes out clean. The muffins should take between 20-25 minutes
  • Loaf: When done lift the parchment and remove The Elvis and place it on a cooling rack. Muffins: Remove from pan and place on cooling rack
  • Let cool, add butter and ENJOY!.
