Midnight in the enchanted island
Many nights I have spent walking the shores of this beautiful island we call home. Just when the sun drops into the sea and the moon peeks out over the ocean, we see this beautiful purplish haze in the sky. At midnight it just intensifies and glows even brighter. With the moon directly on top of us, the water glistening, the coquis singing in the background and the intense smells of the foliage and flowers thick in the air. This drink captures that very essence with its blackberries, blueberries, mangoes, passion fruit and orange juice as well as the Fruit flavored Bacardi rums we used to enhance this midnight color into your dreams! It truly is an honor to call this Enchanted island our home.

Ingredients
Midnight in the enchanted island
- 2 oz. Bacardi Mango
- 2 oz. Bacardi Coconut
- 2 oz. Bacardi Pineapple
- 30 black berries
- 16 blue berries
- 2 ½ cups of chopped Mango
- 4 oz. Orange Juice
- 6 oz. Jarritos Passion Fruit
Garnish
- 4 black berries
- 4 blue berries
- 8 slices of lime
- 4 lime wedges
Instructions
- Gather your ingredients.
- Prepare your blender.
- Start with your orange juice.
- Next is your Jarritos Passion fruit soda.
- Then your berries. Both black and blue!
- Now your frozen Mangos
- Finally add in your Bacardi’s
- Blend until combined
Now let us build your garnish
- Start off with a long skewer and add your lime wedge.
- Now get a thick slice of lime and cut it nearly in half down the edge. (Almost making two slim slices)
- Now stick the skewer though the middle so the flap is facing outwards.
- Repeat this process with a second lime slice and place it on the skewer perpendicular to the first.
- First add your blackberry then top it off with a blueberry now you have created a pretty flower. just for a bit of fun!
- Pour your Enchanted island at midnight into a tall glass, add your garnish and enjoy!
